How to store basmati rice, and why aged rice tastes better
Basmati is one of the few foods that improves with age. Here is how ageing works and how to keep rice at its best at home or in a warehouse.

Why basmati is aged
Freshly harvested basmati has a higher moisture content and cooks slightly sticky. Resting the paddy or milled rice for months lets moisture drop and the starch firm up. Aged basmati elongates more, stays separate and has a stronger aroma, which is why mills mature the crop before packing.
Storing at home
- Keep the bag sealed or move the rice to an airtight container.
- Store in a cool, dry place away from direct sunlight and strong smells.
- Properly stored basmati keeps for 18 to 24 months.
Storing in a warehouse
- Stack bags on pallets off the floor and away from walls to allow airflow.
- Keep humidity low and the space ventilated; moisture is the main enemy.
- Rotate stock so older bags ship first.
